Most of us would like to eat less meat during the week but we all need some inspiration sometimes. I love to make these beetroot burgers, they take about 15 minutes to put together and I usually make enough for 2 midweek meals! Let me know what you think…
Beetroot and Lentil Vegan Burger

Ingredients
- 2 cups of peeled and grated beetroot
- ½ cup of pecans
- ½ cup of rolled oats
- 1 cup of cooked lentils or 1 tin
- 2 cloves of garlic
- 1 tablespoon of coconut aminos or soy sauce
- 1 teaspoon of cumin
- 1 teaspoon of mixed herbs
- 1 red onion chopped
Instructions
- Mix all the ingredients in a food processor until it binds but it still has some texture.
- Form into 4 large or 6 smaller burgers and fry for 5-6 minutes on a medium heat frying pan or skillet until cooked through.
- I like to also cook a large portobello mushroom at the same time for my burger bun and serve with avocado and lots of spicy, sour kimchi. (check out my new course, out this week below)
